Why AOC Bareges Gavarnie?

To guarantee a strong local identity and to preserve ancestral know-how…

Only an Appellation d’Origine Contrôlée (AOC) can meet these requirements.
Since 1995 the local producers have worked with the l’Institut National des Appellations d’Origine Contrôlée (I.N.A.O) to obtain the label AOC, their efforts were rewarded on the 15 September 2003.

To this day this is the only AOC awarded to lamb and mutton production in France and in Europe.

In the heart of the Hautes Pyrenees in the canton of Luz St Sauveur, breeders, butchers, restauranteurs have grouped together in the name of the ASSOCIATION INTERPROFESSIONNELLE DU MOUTON BAREGES-GAVARNIE (INTERPROFESSIONAL ASSOCIATION OF THE BAREGES-GAVARNIE SHEEP) in order to ensure the control and the promotion of their products.

Their word is given to this land, and to the women and to the men who make their living from it…
